You guys! You remember my awesome cookie recipe from a week or two ago? Of course you do. You’ve spoken of nothing else since.
Anway, as per my little chat with Joelle in the comments, I’ve been experimenting with variations on the preparation. And I think I’ve cracked it.
Refrigerate the dough. Seriously. People have different opinions on the length of time, saying anything from a couple of hours to a whole day and night, but it’s my opinion that the length of time is rather a matter of taste - what’s important is that the dough is cold (not cool, cold) when put it into the oven.
I cannot stress enough how much of a difference this makes to the finished cookies - they’re fatter, chewier, more caramel-ly - in short, perfect.
Try it. You’ll thank me for this one.
