:: Recipe: soft, American-style chocolate chip cookies

Makes: loads (approx two dozen - thirty, depending on how much mixture you eat and how big you like ‘em)

300g plain flour
225g unsalted butter
100g granulated sugar
200g light brown sugar
200g chocolate chips
2 large eggs
2 tsp vanilla essence
1 tsp baking soda
1 tsp salt

Preheat the oven to 180 degrees celsius.

Cream the butter and sugar. In a separate bowl, sift the flour, baking soda and salt together. In yet another separate bowl, beat the eggs.

Mix all of the ingredients together and add the chocolate chips.

Eat mixture.

Put ping pong ball-sized balls of mixture on a floured, non-stick baking tray, about 2″ apart.

Bake them for about ten minutes. If you want them soft and chewy (and why wouldn’t you?), they need to come out when they look ever so slightly underdone (pale gold colour).

Let the cookies cool for at least ten minutes before you eat them, or they will be slightly too soft. Any that you don’t plan on eating right this minute should be stored in an airtight container to prevent them from becoming crispy.

OK, that’s about it. I’m sure you can mess about with the mix of brown and white sugar if you fancy, but I had both kinds in the cupboard and so decided to follow a recipe properly for once in my life. Ditto unsalted butter and teaspoon of salt - I imagine you could just use salted butter.

    Ooh yummy! I have been planning on making some choc chip cookies this week after seeing a Orangette’s NYC Times recipe post last week. Did you refrigerate your dough overnight like we were talking about the other day? Reckon it makes a difference? Hmm, maybe it is time for an experiment. A bake off!

    I’m not sure I have enough willpower to leave cookie dough in the fridge for a whole day!

    Yeah I wish I could leave cookie dough in the fridge overnight but I always bake cookies impulsively and I also love to eat it raw… I have fond memories of making cookies when Josh and Kayla moved into the same building as us and all eating them at their counter drinking milk…
