Well, I never claimed to be a domestic goddess in the kitchen, but even I am pretty ashamed of this poor, poor show. This is muffins, people – muffins. Banoffee muffins, to be precise. Except it’s just a big blob of mess.

I think the problem is that I used an American cups recipe without actually possessing measuring cups. It seems that Simon’s Tony the Tiger mug is not an adequate substitute. Who’da thunk it? I also place a lot of the blame on my oven; I used to make amazing gingerbread, but since I’ve moved flats each batch has gone spectacularly wrong. Bad oven.

I’m a little bit sad now.

Awww that’s so sad. Happens to everyone sometimes though. Good on you for showing this, rather than perpetuating the myth that all baking turns out perfect.

I hope you found something else indulgent to eat instead.

Do you know, it’s quite a problem with muffins. I’ve ruined many a batch, even with recipes in proper pounds and ounces. Though it might be worth your while popping to Lakeland Plastics for some measuring cups…I keep meaning to, but I can’t trust myself in the place!

Uh-oh! I think muffins are tricky, mine are always a tad chewy and don’t rise quite enough. Yeah, US recipes are pretty specific what sort of ‘cup’ they mean. I made banana bread last night but I used a kit so I don’t count it as much of an achievement…

Oh no! If it is any consolation, I tried to make muffins tonight and mine didn’t work either (too much goo – think I used too many raspberries and should have defrosted them first).

My jug has cups on it, which made me very happy. :) I didn’t even know until tonight!

I’m glad I’m not the only one! I made everyone eat them anyway and was assured that they tasted great, they just looked, well, yeah…

I think a post on no-bake snacks is in order. Fridge cake and oat cookie bars, oh my…

  7. Sonja Says:

Aargh! I had the same problem a couple of weeks ago. Must get some cups.

Please can someone post / tell me what fridge cake is! I feel like it’s some sort of exclusive club I’m not part of cos I have no idea what everyone is talking about….!

Aw, Em! All the corners are very excited about fridge cake, at the moment. It’s basically a cake that you don’t bake – you refrigerate! So, you’d get all your tasty ingredients – oats, nuts, fruit, crushed biscuits, toffee, etc – and mix them all up with an ingredient that goes hard in the fridge (like chocolate). Like grown-up rice krispie cakes. Well, that’s what I’ve decided fridge cake is, anyway – I could have made that up!

And on the subject of fridge cake – Simon has renounced chocolate; what can I make him a delicious fridge cake from instead? He loves toffee, fudge, bananas, strawberries, dried fruit, but not cherries, nuts, other actual fruit.

This one doesn’t have chocolate… maybe you could use it for ideas? :)

  12. Emily Says:

Or caramel!! That is runny then sets, right? yum.

  13. Kirsty Says:

    Yeah! Si loves caramel.

    They exploded!

    aaaawwwwwwww! big hugs
